I have a customer in the area of Rancho Bernardo, CA and spent an evening in the area in DEC 2018. The closest brewery I could find was the Karl Strauss Brewery 4S Ranch which was located a 5 min Uber ride from the Radisson in Rancho Bernardo. I was there with a German colleague and we arrived about 6pm on a MON. We had some appetizers and I sampled several beers which were all pretty good. My favorites were the Mosaic Session IPA, Le Hop IPA and the Big Barrel DIPA. Food was good and the inside and outside space was great. Lots of heated area outside and was not too loud inside. Sometimes breweries don’t have the best acoustics but even with a full restaurant, it wasn’t that noisy. Karl Strauss has several breweries in the San Diego (6 from what I could find on Google maps).
